
Paradise Peach Marinade
Do you remember when peaches were sweet and juicy? Have you ever tasted a peach on the mainland? Well, in some places on the mainland you can go into any grocery store or fruit stand and find fruit that is sweet. Here is Hawaii; it is not an easy task to find those sweet, succulent fruits. There is something about flying fruit over the Pacific Ocean that takes away from the charm and flavor of the delectable peach.
If you manage to find such a jewel as a sweet peach, you will pay more for the pleasure in these islands. With the high prices in the supermarket, buying fruit is a luxury in Hawaii. Our local fruits are wonderful, but I want a juicy peach. I want one that is so juicy it runs down my chin when I bite into it.
It is spring in Hawaii and time to bust out the barbeque. I will share a peach marinade recipe that will satisfy even the most sophisticated palates. You can use frozen peaches for this recipe. The nutmeg really makes the glaze tasty and interesting.
This marinade cooks up well in the oven too. You can pour it on chicken or pork and bake in a 350 degrees oven. You can also cook the marinade on low heat in a saucepan and serve as a side glaze on the dinner table.

Ingredients Needed:
| 2 cups crushed peaches, about 3 fresh peaches or frozen peaches ½ cup macadamia oil ½ cup light brown sugar 1 tsp crushed garlic 1 tsp ground nutmeg |
If you use fresh peaches you will need to peel off the skin and remove the pit before crushing them. The peaches must be very ripe and almost mushy for best results. I use a mashed potato tool to crush the peaches. If you use frozen peaches, thaw them first before crushing.

Mix the peaches, oil, brown sugar, garlic, and nutmeg in a bowl. Smash all the ingredients so they are well blended.

Marinade either chicken or pork with the peach marinade for at least a few hours in the refrigerator. If you do not have the time to wait, then cook your meats straight away.
This marinade can be brushed on the meats that you are grilling on the barbeque. The sugar will caramelize into a crusty coating. The oil will keep the meats from burning on the grill.

This marinade will last a few days in the refrigerator. You can add an ounce of Jack Daniels or Bourbon for a zippy taste.
