Deviled bones are easy to make and inexpensive. The beef rib bones are coated with mustard, bread crumbs and herbs. This is a great picnic food and unusual pot luck fare.
The beef bones can be cooked ahead of time and frozen. The last minute bread crumb coating can be added after thawing them overnight in the refrigerator. If you are in a hurry you can bread the frozen beef bones, but allow for extra baking time.
Ingredients Needed:
- 2 racks of beef ribs
- ½ cup spicy brown mustard
- 2 tablespoons light brown sugar
- 1 ½ cups fresh or packaged bread crumbs
Cook the ribs on the barbeque grill as a whole rack. Do not cut them apart until after cooking. Ribs have a good deal of fat that needs to be cooked out. You can baste the ribs overnight in 2-4 tablespoons of balsamic vinegar mixture to tenderize the meat.
If you cannot cook the ribs on a barbeque grill they can be baked in the oven, all you need is a pan of water and a couple of drapery hooks or large paper clips. 8 clips or hooks will be enough.
You can turn your oven into a Chinese Oven that allows the heat to circulate around the ribs evenly so they brown and cook evenly.
Put one oven rack at the lowest slot and one oven rack at the highest slot. You will start this recipe with a cool oven so you will be able to hang the ribs without burning yourself.
Line a broiling pan with aluminum foil and add ½ inch of water in the pan. When the water heats up it creates steam that keeps the ribs from drying out as they cook. The pan will keep the dripping fat from messing your oven.
Cut both whole racks of ribs in half and attach a large bent paper clip bent into an S shape the ends of each section of ribs.
Suspend the ribs from the top rack with the paper clips. Leave room between the racks of ribs so they are not touching. Turn the oven to 425 degrees for 15 minutes. They lower the oven heat to 325 degrees and continue roasting the ribs. Roast the ribs for 1 hour and 20 minutes at 325 degrees. This amount of cooking time will insure tender ribs.
Remove ribs from the oven in this manner: Remove pan with drippings and water, drain in sink. Place the same pan on the oven door and pull the top oven rack out so the ribs are directly over the pan. Carefully unhook the paper clips and lower the sections of ribs to the pan below. Cut the ribs into individual portions; between the bones.
Mix the mustard and the brown sugar in a small bowl. After the ribs are cooled, brush the mustard mixture on the ribs. Roll the ribs in the breadcrumbs and coat thoroughly. Arrange the ribs with the rounded side up on a bake pan or broiler pan. I sprayed the ribs with PAM so the breadcrumbs would toast nicely. Cook the breaded ribs in a 425 degree oven for 25-30 minutes, or until the ribs are browned.
