A good friend of mine and mentor has been telling me about the benefits of coconut oil for quite some time and until I did the research I was skeptical.

There were farmers who were feeding their cows coconut oil to help them fatten up but the cows were losing weight. This led to research on humans and the findings were remarkable. According to Wikipedia there was a randomized double-blind clinical trial done with 40 women and the findings were that coconut oil reduced abdominal obesity.

I went out and bought a couple of jars of organic virgin coconut oil and have some creative recipes to share with you using coconut oil.

Coconut oil is extracted from the meat of the coconut from the coconut palm. Coconut oil is very heat stable and can be used for cooking or frying. It doesn't get rancid as quickly as other oils and does not have to be refrigerated. It can last up to two years. During the process of extracting the coconut oil from the coconut meat the long-chain fatty acids are removed and the medium chain saturated fats remain. What this translates into is that the oil is edible and good for you too.

Coconut oil is used in nondairy creamers and snack foods. Coconut oil is antifungal and kills yeast. It kills the fungus/yeast that cause certain infections such as candida, thrush, diaper rash, ringworm and more. It is also shown to be a "low fat" fat. It is quickly broken down in the liver and used as quick energy. It's not stored like other fats in your body and can boost your energy and endurance. Some athletes blend it into their drinks. It is also touted to support thyroid function. In study done at the Philippine children's medical Center it accelerated the normalization of respiratory rates in the lungs of children with pneumonia .

Coconut oil also improves absorption of fat soluble vitamins and calcium, magnesium, and amino acids. Regular use of coconut oil decrease the symptoms of diabetes; especially type II diabetes. It helps the body to use blood glucose, improves insulin secretion and absorption.

Coconut oil supports immune function, helps the body heal faster and is good for your heart. According to research coconut oils have a much lower chance of clogging arteries and can lower your blood pressure.

It is also used as a bio diesel fuel. Coconut oil is used as a massage oil and softens your skin. It can prevent wrinkling, age spots, sagging skin and can make your hair healthier.

There is so much research on the Internet about coconut oil that I could type ten pages here, but I won't.

I have had to be creative to substitute coconut oil in my diet. I made brownies with coconut oil instead of vegetable oil and they turned out delicious. The oil made them chewier than my usual recipe and they have a coconut nutty taste. I also grilled some sandwiches in coconut oil and the person I shared the sandwich with raved about the taste. I have developed a salad dressing with coconut oil that was the hit at my Women in the Word Bible study at new Hope Church potluck. I was hesitant to share my recipe because I did not have confidence that others might enjoy it.

This month I'm encouraging my readers to be creative and experiment with this recipe. I will set some parameters so you can get the measurements in the correct proportion so as to be tasty. This dressing can be refrigerated but I have not been doing that because it gets hard and does not pour easily when it's cold.

Coconut Mango Salad Dressing

I bought a jar of this coconut mango marinade and used it as a base for the dressing. If you cannot find the dressing that is in the photograph you can still have success with this recipe.

Three quarters of the dressing should be coconut oil. You can mix this in a measuring cup or in a bowl.

To this coconut oil I added 1 teaspoon of crushed garlic and 1 teaspoon of crushed ginger.

I added a tablespoon of soy sauce or shoyu. I also added several tablespoons of juice. You can use pineapple juice, pomegranate juice, mango juice or any tropical juice mixture.

Once all these ingredients are combined I put them in a jar and gave them a good shake and tasted the mixture to see if I need to make some adjustments. The recipe comes out a little different each time but is delicious every time.

I use this dressing on a fresh green salad and topped the salad with crushed nuts and coconut sprinkles. According to research eating this dressing could actually help me lose weight.

This coconut dressing makes a great gift when you go to visit someone else's home or at holiday time. You can purchase the coconut oil at the grocery store for about $11 per jar. It is a bit pricey but can be blended with another oil to make it go farther. I recommend Spectrum Brands organic virgin coconut oil for its taste. It is from Columbia or the Philippines. Remember to share this recipe with someone you love and spread the Aloha Spirit where ever you are.
