Green Tea Chamomile Blue Agave Beverage

This nectar is 25% sweeter than white sugar. Blue agave nectar has a glycemic index of 39 or less. What this means is that it has natural sweetness without causing the blood sugar spike. It is non-crystallizing and quickly dissolves. It looks like honey but tastes sweeter.

I purchased some from Costco in a two bottle package for less than eight dollars for both bottles. I have been using it as a sweetener in my iced green tea. I found this blue agave particularly tasty as a dip for strawberries. I bought these really red strawberries and thought they would be real sweet, but they had tartness to them.  I dipped them in the blue agave nectar which brought out the flavor of the strawberries.

Blue agave nectar can be used on top of hot oatmeal or cold cereal instead of using white sugar. Use it on top of pancakes or waffles instead of that store bought syrup. The only thing tastier than blue agave on pancakes is pure maple syrup. I blended blue agave and maple syrup equally and was ‘onolicious’.

When cooking with blue agave nectar you can use as much as 75% of the amount of sugar called for to replace white sugar. If you use blue agave nectar in a recipe you must reduce the other liquids in the recipe by 30%. When you bake cookies or brownies with blue agave nectar you'll have to reduce your baking temperature by 25° and bake the item a bit longer.

A one tablespoon serving of blue agave nectar has only 60 calories. There are no fat grams, no cholesterol, no saturated fat and 16 grams of sugars per tablespoon. Blue agave syrup is very stable and does not ferment quickly. What this means is that it has a shelf life of up to two years after opening. As long as you store it with a lid on in a dark, cool environment it will keep for a long time. You may also store in the refrigerator.

I blended some agave nectar in a bottle of store bought BBQ sauce and the ribs that I cooked were caramelized and seemed to bring out a richer, bolder taste.

Here is my favorite warm weather drink:

You can use a 12 cup coffeemaker or 4 cup coffeemaker to brew the tea. I put 4 green tea bags in the coffee filter basket and I also put 2 chamomile tea bags on top of the green tea bags. Just brew as if you were making a pot coffee but instead use the tea bags in the filter basket. You can add more tea bags or different flavored tea bags. Sometimes I use decaffeinated green tea so I'm not awake all night. I cannot taste the difference between the regular green tea bags and the decaffeinated green tea.

After the tea is brewed I add blue agave sweetener to the warm tea. Allow the tea to cool to room temperature at least a half hour. The tea mixture should double strength because you will be adding cool water in your beverage. I add water 1:1 ratio in a separate container and keep it refrigerated. I also add some flavored crystal light for variety. I make ice cubes with the tea mixture so when I add ice it will not dilute my tea.

I've been meaning to pick some up and use with my baking, but always assumed it was expensive. I'll check it out at costco~ thanks!
