Ingredients Needed:
- Box of Betty Crocker cake mix… Carrot flavor
- 3 eggs
- ½ cup vegetable oil… I used canola oil
- 2 cups fresh grated carrots
- 1 cup water
- ½ cup pecans to sprinkle on white chocolate


Grate 2 cups raw carrots.
Heat the oven to 350 degrees for shiny metal or glass pans. 325 degrees for dark or nonstick pan.
Add all ingredients in a large bowl and mix by hand for 2 minutes. You can also use an electric mixer on low speed 30 seconds, then on medium speed 2 minutes.
Mix all ingredients in a bowl.
Grease bottom and sides of the pan you are using. For cupcakes use paper cups. See above photo with PAM.
Pour the carrot cake batter into your choice of pan. If you make cupcakes only fill the cups ½ full as the batter rises when baking and doubles in size.
Do not fill pan to top, allow for expansion.
Check the cake mix box for bake times.
Cool 10 minutes before removing from pan. When the cake is done run a spatula or plastic knife around the edges of the cake before tipping the pan over to release the cake or cakes.
Ready to remove from the oven.
For variety you can use any flavor cake mix. You can also frost with melted milk or dark chocolate.
To melt chocolate chips:


Melted white choc chips in plastic dish. Stir well.
Use a microwave safe dish and add about 1 cup chips and heat 2 minutes on high. Remove from micro and stir until smooth. You may have to adjust this time for your microwave.
Drizzle the melted white chocolate over the warm cake or little Bundt cakes or cupcakes.
Drizzle melted white chocolate.
Sprinkle with pecans.
These are nice served at room temperature as the chocolate will be softer and have a creamier mouth feel.
